It's good to have a few little sauces up your sleeve . . . for those times when you're staring at a piece of fish, or a chicken breast, and you're uninspired (or unable) to make something special out of it. Just sauce it up. You'll feel better.
EZ Creamy Cilantro Sauce (from the Nutrition Action Healthletter)1 bunch of cilantro juice of 1 lime 1/4 c. reduced fat sour cream 1/4 t. salt
Pulse all the ingredients in a food processor, just until smooth.
Spoon over 1 1/2 lbs. of grilled or sauteed boneless, skinless chicken breasts or grilled fish. I also think this would be great as a sauce for fish or chicken soft-tacos.
